Wedding Dessert Trends Emphasize Creativity and Customization

Wedding desserts aren’t all about the cake anymore. Steve Beauvais, executive chef and co-owner of Lowell caterer Two Chefs Are Better Than One, says rustic themes and “naked cakes” (when some of the cake shows through the icing) are still popular, but “a lot of couples are just doing a very small ceremonial cake for them to cut, or a small cake for them to cut and serve as part of a larger dessert buffet. … We are seeing a lot of mini dessert shooters, which are fun and beautiful. Cupcakes are always a favorite, as well as cheesecake and topping bars, made-to-order ice cream sandwiches, and ice cream sundae bars. Seasonal pies, customized cannolis, doughnut bars and even vertical doughnut walls are making appearances. Food trucks have been very popular, including cookie trucks, fried dough and ice cream trucks.”

Whatever other goodies a couple may offer, the cake will always be the centerpiece of the dessert table, and it should be a work of art that resonates perfectly with the decor. Cake decorators have been pushing the bounds of creativity beyond the icing and other embellishments to include the design of the cakes as well, with unconventional shapes in the form of geometric patterns or letters making a mark, according to

Metallic detailing, including edible gold leaf designs, bold colors that incorporate the theme of the wedding, and intricate white-on-white cakes that use a variety of textures to create interesting patterns and arrangements, will all be trending in 2019. 

At the other end of the spectrum, says some couples are even opting for black icing to provide a striking contrast to their color schemes. 

It seems there is no wrong way to do a wedding cake this year. Black or white or bold colors. Round or square. Shaped like symbols or letters. Iced or frosted or covered in fondant or nearly naked. The options are virtually unlimited. Just choose your favorite flavor, mix up some trends to taste, add a little personality and a dash of creativity, and enjoy!
