Servings 10-12

A traditional dessert, served at festivals, on holidays and in restaurants. Recipe is from a cookbook written by the women of St. Anthony’s Parish in Lowell.

INGREDIENTS:
- 2 cups rice
- 6 cups milk
- 2 cups water
- 2¼ cups sugar
- 4 tablespoons lemon extract
- Rind of 1 lemon, cut into large strips
- 2 cinnamon sticks

DIRECTIONS:
1. Mix ingredients in large pot and bring to a boil. Lower the heat and simmer with the pot partially covered until all liquid is absorbed. No stirring required.
2. In a bowl, mix the following ingredients:
- 6 egg yolks
- 1 tablespoon butter, melted
- ½ cup milk
3. After rice is cooked, stir egg yolk mixture slowly into the rice, making sure ingredients are mixed well.  If you prefer creamier rice, add a bit more milk.  Remove cinnamon sticks and lemon rind and spoon into serving dishes.  Allow to set in refrigerator.  Sprinkle with cinnamon before serving.
